Yummy! I have no other words to describe this dish. We love breakfast burritos in our home because they're so quick to prepare and are the perfect protein-packed breakfast after a long night's sleep (if we're lucky enough to get one these days)
Eggs | 2 | |
Milk | 2 Tablespoon | |
Cooked black beans | 3/4 Cup (12 tbs) | |
Salsa | 1/2 Cup (8 tbs) | |
Canola oil/Oil, butter | 1 Tablespoon | |
Whole wheat tortillas | 2 Large | |
Sour cream/Cheese, avocado | 2 Tablespoon |
MAKING
1. In a bowl, combine eggs, milk and salt. Whisk it well.
2. In a pan, heat oil and scramble egg.
3. Add beans and salsa. Cook until heated through.
4. On a tortilla, place the scrambled egg and roll in half.
SERVING
5. Serve with sour cream and avocado.
