Salsa al Fresco w/Baked Blue Corn Chips

A refreshing salsa using the freshest ingredients. Delicious and versatile enough to eat with almost anything, and quick enough to whip up for unexpected visitors!
|Tomatoes||4 Large, chopped|
|Red onion||1 Small, chopped|
|Jalapeno||1 , deseeded|
|Cilantro||1 Cup (16 tbs), chopped|
|Lime juice/More to taste||1 Tablespoon|
|Ground black pepper||To Taste|
1. In a food processor, combine all ingredients and pulse until salsa is of desired texture.
2. Serve with warm, baked blue corn chips (available at Trader Joe's)

StoryI'm not a big fan of chunky salsa's but I also don't like naked chips. I came up with this salsa to cater to my own taste buds, as well as come up with an everyday salsa that can go well with anything: chips, poultry, beef, and margaritas. Cheers!
