Fresh Pico De Gallo Cold Smoked With Apple Wood

Ingredients
  Roma tomatoes 5 , seeded, chopped coarsely (5-6)
  Tamarillo 5 , seeded, chopped coarsely
  Red onion 1 1⁄2 , coarsely chopped
  Fresh jalapeno 3 , seeded, chopped coarsely
  Garlic 2 Clove (10 gm), minced
  Cilantro 1 Bunch (100 gm), finely chopped
  Lime 1 , juice extracted
Directions

GETTING READY
1. In a large mixing bowl, combine tomato, onion, jalapeno, cilantro, garlic, and lime juice. Mix well.
2. In shallow storage containers, put the mixture.
3. Fire smoker with apple pellets or wood dust.

MAKING
4. Place shallow containers, uncovered in the smoker. Cover smoker and cook for about 6 hours.
5. Stir Pico De Gallo hourly during the process of smoking.

SERVING
6. Serve Pico De Gallo with meatloaf.
