This is a beautiful fresh salsa. It does take some work as you have to chop a lot of vegetables. It has no fat and is quite healthy with all the vegetables in it. It is always a hit when we make it at home. You can either eat it with chips, as a salad or top cooked fish with it. Whatever you decide I promise you will love it!
2 Cup (32 tbs), shredded
1 Cup (16 tbs), shredded
1 Large, peeled, seeded, diced
2 Tablespoon, finely diced
4 Medium, diced
8 Small, thinly cut
1 Large, juiced
1⁄2 Cup (8 tbs), chopped (Optional)
3 Tablespoon, sliced
1. Prepare the ingredients according to the list.
2. In a large bowl, add all the ingredients and mix well.
3. In a serving bowl, serve chilled with chips or fish.
