Shepard's Pie, Beef Enchilada And Taco Soup

Ingredients
  Ground beef 1 Pound (for Shepards Pie + 1 Pound for Taco Soup + 1 Pound for Beef Enchilada)
  Salt 1 Dash (as needed to taste for Shepards Pie and for Taco Soup)
  Pepper 1 Dash, ground (as needed to taste for Shepards Pie and for Taco Soup)
  Gravy 12 Ounce (1 Jar for Shepards Pie)
  Corn 1 Cup (16 tbs), frozen (for Shepards Pie + 1 Cup for Taco Soup)
  Mixed vegetables 1⁄2 Cup (8 tbs), chopped, frozen (celery, peppers and onions for Shepards Pie + 1 Cup for Taco soup)
  Italian seasoning/Thyme 1 Teaspoon (for Shepards Pie)
  Garlic 1⁄2 Teaspoon, crushed (for Shepards Pie + 1 Teaspoon for Taco Soup)
  Kidney beans 1 Can (10 oz), drained (for Taco Soup)
  Black beans 1 Can (10 oz) (for Taco Soup)
  Diced tomatoes with chilies 1 Can (10 oz) (for Taco Soup)
  Fresh salsa 1⁄2 Cup (8 tbs) (for Taco Soup + 1/2 Cup for Beef Enchilada)
  Chili powder 1 1⁄2 Teaspoon (for Taco Soup)
  Cumin 1⁄2 Teaspoon, ground (for Taco Soup)
  Diced tomatoes 1⁄2 Can (5 oz) (for Taco Soup)
  Sour cream 1⁄2 Cup (8 tbs) (for Beef Enchilada)
  Cream cheese 1⁄2 Cup (8 tbs), whipped (for Beef Enchilada)
  Tortillas 5 Small (as needed, for Beef Enchilada)
  Cheese 1⁄2 Cup (8 tbs), shredded (as needed, for Beef Enchilada)
Directions

GETTING READY
1) Preheat the oven.

MAKING
2) Shepard's Pie : Into a bag holder with a zip/seal-able bag, add the ground beef, salt, pepper, gravy, corn, celery, peppers and onions, Italian seasoning and garlic.
3) Seal the bag and mix up the ingredients thoroughly until well blended. At this stage label the bag and freeze the Shepard's Pie mixture until needed.
4) Transfer the Shepard's Pie mixture into a foil pan, top with a layer of mashed boiled potatoes and bake in the preheated oven until done.
5) Taco Soup : In another bag holder with a zip/seal-able bag, add the ground beef cooked with taco seasoning, corn, celery, peppers and onions, kidney beans, black beans, diced tomatoes with chilies, salsa, diced tomatoes with the juices, salt and pepper to taste.
6) Seal the bag and mix up the ingredients thoroughly until well blended. At this stage label the bag and freeze the Taco Soup mixture until needed.
7) Beef Enchilada : In another bag holder with a zip/seal-able bag, add the, ground beef, salsa, garlic, chili powder, cumin, sour cream and cream cheese.
8) Seal the bag and mix up the ingredients thoroughly until well blended. At this stage label the bag and freeze the Beef Enchilada mixture until needed.
9) Wrap and fold the Beef Enchilada mixture in the tortillas and arrange in a 9-inch foil pan. Top with Cheese and bake in the preheated oven until done.

SERVING
10) Serve the Shepard's Pie, Taco Soup and Beef Enchilada as desired.

TIPS
Use the Taco Soup mixture to make Burritos. Alternately, add rice to the mixture for a completely different texture, roll in soft taco shells and add cheese. Else simply cook the mixture, top with cheddar cheese and sour cream to serve.
