Ingredients
  Sodium 1 Teaspoon
  Red pepper 1 (roasted)
  Yellow bell pepper 1 (roasted)
  Green bell pepper 1 (roasted)
  Red onion 1 (peeled)
  Jalapeno 1 , minced (roasted)
  Chile 1 , minced (roasted)
  Lime juice 1 Teaspoon
  Green onion 1 , sliced
  Cilantro leaves 2 Tablespoon, coarsely chopped
  Heirloom tomato 1 (small dice)
  Salt 2 Teaspoon
  Olive oil 1 Teaspoon
Directions

Method
1) Light the grill, allow the flame to burn down to a medium fire.
2) Brush peppers, and green onion with oil.
3) Grill until brown, but not burned, about 8 minutes. Turn frequently.
4) Peel, seed, and de vain peppers/chiles.
5) Prep all ingredients as outlined above, place in bowl.
6) Add lime juice, cilantro and salt to taste.
7) Chill for one hour.

Makes 3 1/2 cups.
