1) Mix all ingredients well together in a large bowl.
2) Place a large pan over high heat and add the oil.
3) Once the oil is hot enough, add the onion and peppers and saute for about 2-3 minutes.
4) Add the shrimp mixture to the vegetables. Mix well and cook for 2-3 minutes.
5) Remove the pan from the heat, let it sit for about a minute and then place the shrimp and vegetable mixture on a tortilla. If preferred, sprinkle with some cheese. Repeat the process till all tortillas are done.
