Seared Avocado Cake with Sumac Peach Salsa and Chipotle Carrot Coulis

We catch up with Chef Eric Nelson of the Vitality Bistro at Wellspring just as he is putting the finishing touches on his new menu items at the Bistro. The bistro uses a lot of fresh ingredients from their own garden and they source foods from local farmers and growers. This time he has a Seared Avocado Cake, a sumac peach salsa and a chipotle carrot coulis for us.
  Focaccia bread 2 1⁄2 Ounce, diced into medium size cubes (For the Seared Avocado Cakes)
  Avocado 2 1⁄2 Ounce, smashed (For the Seared Avocado Cakes)
  Red bell pepper 1 Ounce, brunoise (For the Seared Avocado Cakes)
  Red onion 1 Ounce, brunoise (For the Seared Avocado Cakes)
  Black bean 1 Ounce, cooked, drained (For the Seared Avocado Cakes)
  Garlic 1 Ounce, minced (For the Seared Avocado Cakes)
  Cilantro 1 Ounce, chopped (For the Seared Avocado Cakes)
  Lemon juice 1 Teaspoon (For the Seared Avocado Cakes)
  Egg white 1 Tablespoon (For the Seared Avocado Cakes)
  Salt 1⁄2 Teaspoon (For the Seared Avocado Cakes)
  Cracked black pepper 1⁄4 Teaspoon (For the Seared Avocado Cakes)
  Butter 1 Teaspoon (For the Seared Avocado Cakes)
  Olive oil 1 Teaspoon (For the Seared Avocado Cakes)
  Peach 2 Ounce, diced (For the Sumac Peach Salsa)
  Jalapeno 1⁄4 Ounce, brunoise (For the Sumac Peach Salsa)
  Sherry vinegar 1⁄2 Teaspoon (For the Sumac Peach Salsa)
  Honey 1 Teaspoon (For the Sumac Peach Salsa)
  Sumac 1 Pinch (For the Sumac Peach Salsa)
  Carrot 7 1⁄2 Ounce, steam (For the Chipotle Carrot Coulis)
  Chipotle peppers 2 Ounce (For the Chipotle Carrot Coulis)
  Lime 1 Medium, squeeze (For the Chipotle Carrot Coulis)
  Orange juice 1 Cup (16 tbs) (For the Chipotle Carrot Coulis)

1. To make the Sumac Peach Salsa: Mix all ingredients in a bowl. Let sit or chill until ready to serve.
2. To make the Chipotle Carrot Coulis: Place all ingredients in a blender and puree until smooth. Strain through a fine meshed sieve and set aside. Cool if you like.
3. To make the Seared Avocado Cakes: In a large bowl, add all ingredients and mix well. Make two patties.

4. In a saute pan, heat oil over medium high. When hot place the two patties. Fry until golden brown on one side, then turn and fry on other side.
5. Remove and drain on paper towel.

6. Serve the Avocado Cakes topped with the salsa and the coulis drizzled around it.

The Seared Avocado Cakes are served with a peach salsa and a chipotle carrot coulis. It seems like a lot to prepare, but once you have your ingredients organized, it goes together quickly. These are the vegetarian version of the popular favorite
