1. Cut the avocado in halves and remove the seed and scoop out the flesh and squeeze lime juice and toss.
2. Using a potato masher mash the avocado to desired consistency.
3. Add shallots and garlic, mix together.
4. Season with salt and pepper and add the tomatoes, fold them gently.
5. Cover with plastic wrap ensuring the surface touches the wrap.
6. Store in the refrigerator until needed.
