Tomatoes Stuffed With Guacamole

Ingredients
  Salt To Taste
  Pepper To Taste
  Ripe avocados 3 Large
  Lemon juice 2 Teaspoon
  Cottage cheese 1 Pint
  Green onion 1
  Chili sauce 1 1⁄2 Tablespoon
  Tomatoes 6 Large
  Lettuce leaves 3
  Paprika To Taste
  Pitted olives 6
Directions

Peel and seed avocados; mash until creamy.
Add lemon juice, salt, pepper, cottage cheese, green onion and chili sauce; blend well.
Blanch tomatoes; remove skins.
Place tomatoes on end; cut into eighths, slicing almost to bottom.
Spread petals gently; arrange tomatoes on lettuce leaves.
Fill each with guacamole; sprinkle paprika on top.
Garnish with pitted ripe olives.
