Pan Fried Tilapia With Fresh Tomato And Olive Salsa

The goodness of fish with a great salsa to complement its flavour. Enjoy!
Ingredients
  Tilapia fillets 2
  Fresh tomatoes 1 Cup (16 tbs), diced
  Green olives 1 Cup (16 tbs), roughly chopped
  Fresh parsley 2 Tablespoon
  Fresh basil 1 Tablespoon
  Fresh oregano 1 Teaspoon
  Cajun seasoning 1 Tablespoon
  Olive oil spray 2 Dash
Directions

MAKING

1. Place a sauté pan over medium heat and spray lightly with olive oil. Add diced tomatoes, olives, fresh parsley, basil and oregano.  Stir and let cook for a few minutes. Place in a separate bowl and allow to cool.

2. Season tilapia with the Cajun spices.

3.  Spray the pan with some more olive oil and saute tilapia for about 6 minutes on each side over medium-high heat. Handle carefully as tilapia breaks easily.

SERVING

4. Serve tilapia with the salsa on top.

TIP

You can also use Near East pine nut couscous with some lemon squeezed on top as a side dish. Enjoy!
