Tofu En Salsa Verde With Adzuki Beans

Ingredients
  Tomatillos 1 Pound, husked
  Onion 1 Small
  Garlic 2 Clove (10 gm)
  Dried parsley 1 Tablespoon
  Chipotle chili 1
  Firm tofu 2 Pound, cubed
  Lime juice 3 Tablespoon
  Canned beans 3 Cup (48 tbs), rinsed, cooked
  Parsley/Cilantro 1 Tablespoon (for garnish)
  Salt To Taste
Directions

MAKING
1. In a saucepan with 1/2 inches deep water place husked tomatillos.
2. Boil and reduce the heat. Keep the pot covered.
3. Cook for 10 minutes till the tomatillos are tender. Drain the excess water and col.
4. In a blender blend onion, garlic, tomatillos, parsley and chile.
5. In a pot place sauce. Simmer uncovered for 15 minutes.
6. Add lime juice and tofu. Stand for 15 minutes.
7. Taste and adjust the seasoning. Cover the pot and simmer for another 5 minutes.

FINALIZING
8. Spoon salsa verde and tofu in plates.
9. Depress the central part and place at least 1/2 cup of adzuki in the depression.

SERVING
10. Serve Tofu En Salsa Verde With Adzuki Beans with parsley and cilantro.
