Mexican Zucchini

Ingredients
  Onion 1
  Garlic 1 Medium
  Oil 2 Tablespoon
  Zucchini 1 Pound
  Canned tomatoes 16 Ounce (1 Can)
  Oregano 1⁄2 Teaspoon
  Canned corn niblets 12 Ounce (1 Can)
Directions

MAKING
1) Using a sharp knife, chop the onion finely
2) Into a skillet, heat some oil
3) Saute the garlic and onion till soft and tender
4) Scrub and cut the zucchini
5) Using a sharp knife, slice the zucchini, thinly and add it to the onion
6) Using the fingers, squeeze the tomatoes to break up and mix in with the tomatoes
7) Add the oregano, salt and pepper
8) Cover with a lid and cook till the zucchini is tender and soft
9) Add in the corn just before the zucchini before it is cooked
10) Heat till the mixture is cooked through

SERVING
11) Serve the mixture into a large serving bowl and serve with bread
