Vegetarian Chili

Ingredients
  Carrots 1 Cup (16 tbs), diagonally sliced
  Celery 1 Cup (16 tbs), sliced
  Green onion 1 Cup (16 tbs), chopped
  Pepper red 1 Cup (16 tbs), chopped
  Green pepper 1 Cup (16 tbs), chopped
  Leeks 1⁄2 Cup (8 tbs), chopped
  Garlic 1 Clove (5 gm), minced
  Green beans 1⁄2 Cup (8 tbs), sliced
  Yellow beans 1⁄2 Cup (8 tbs), sliced
  Chili powder 1 Tablespoon
  Dried basil 1 1⁄2 Teaspoon
  Cumin 1 1⁄2 Teaspoon
  Oregano 1 1⁄2 Teaspoon
  Canned tomatoes 28 Ounce (1 Can)
  Canned kidney beans 19 Ounce (1 Can)
  Parmesan cheese 1⁄2 Cup (8 tbs), grated
Directions

MAKING
1) Into a 2.5 liter bowl, mix in the carrots, celery, onions, red and green peppers, green and yellow beans, leeks and garlic
2) Add in the chili, cumin, oregano and pepper
3) Drain the canned tomatoes, keep the juice
4) Roughly chop up the tomatoes
5) Add the tomato juice to the vegetables
6) Cling wrap and microwave on high for 12 minutes till the vegetables turn tender
7) Add the tomatoes and kidney beans and microwave for 2 minutes till just heated through
8) Ladle the mixture into 4serving dishes and top off with parmesan cheese
9) Microwave the dish till the cheese starts to melt

SERVING
10) Serve Warm
