This Cheese & Chicken Crunchy Quesidilla is a perfect lunchtime recipe with a great combination…although Phoebe wasn’t too impressed, I absolutely loved it.
Chopped up some red cabbage and spring onions, add chicken pieces, grated carrot and cheese in a bowl then spread over a tortilla in a pan over a heat and top with another tortilla….let it cook for 3 minutes….then put the pan on the grill to do the top of the other tortilla. Leave to cool for a minute or two and then chop into funky shapes….really nice!

1. In a bowl, mix chicken, cabbage, spring onion, cheese, and carrot. Mix well.
2. Set a pan on flame, and place a tortilla on it.
3. Spread the chicken mixture evenly on top and cover it with another tortilla. Cook for 3 minutes.
4. Remove from oven and pop the pan in grill for 3 minutes or until nice and golden on top.
