Salsa Vinaigrette

Ingredients
  Red onion 1⁄4 Cup (4 tbs), finely diced
  Thinly sliced scallions 2 Tablespoon
  Minced garlic 1 1⁄2 Teaspoon
  Jalapeno pepper 1 , seeded and finely chopped
  Fresh coriander 2 Tablespoon, chopped
  Cumin 3⁄4 Teaspoon
  Freshly ground black pepper 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Olive oil 2 Tablespoon
  Vinegar 1 Tablespoon
Directions

MAKING
1 In a large mixing bowl put all the ingredients, and mix well.
2) Taste for seasoning, adjust if needed.
3) Remove the excess liquid.

TIPS
This salsa can be prepared 1 day in advance, covered and refrigerated.
