Breakfast For Dinner Burritos

Ingredients
  6 inch flour tortillas 8
  Eggs 8 Large
  Canned chopped green chilies 4 Ounce (1 Can)
  Salsa 3 Tablespoon
  Vegetable oil 1 Tablespoon
  Shredded mexican cheese blend 6 Ounce, shredded (1 1/2 Cups, For Serving)
  Chopped scallions 1⁄2 Cup (8 tbs) (Light Green Parts, For Serving)
Directions

1. Stack tortillas and wrap in foil. Place in oven and heat oven to 350°F. Let tortillas warm for at least 5 minutes.
2. In a medium bowl, beat together eggs, chilies, and salsa. In a nonstick skillet over medium-high heat, heat oil. Add egg mixture and cook, stirring, until scrambled. Transfer eggs to a serving platter.
3. Unwrap warmed tortillas and place 2 on each plate. Top each tortilla with a spoonful of eggs and serve immediately with cheese and scallions on the side.
