New Mexican Chicken

Ingredients
  Unbleached flour 1 Teaspoon
  Ground cumin 1⁄4 Teaspoon
  Chicken breast boneless skinless 4 Ounce
  Oil 1⁄2 Teaspoon
  Chunky salsa 1⁄4 Cup (4 tbs)
  Lime juice 1 Tablespoon
  Chopped fresh coriander 1 Tablespoon
Directions

On a sheet of wax paper, combine the flour and cumin.
Dredge the chicken in the mixture to coat well.
In a small (large) frying pan over medium heat, heat the oil for 2 minutes.
Add the chicken and saute for 2 minutes per side.
Add the salsa and lime juice.
Flip the chicken to coat well.
Cover and cook for about 7 minutes, or until the chicken is cooked through.
Stir in the coriander.
