Tortilla Pinwheels With Smoked Turkey
|Yogurt cheese||1⁄2 Cup (8 tbs)|
|Fat free ricotta cheese||1⁄2 Cup (8 tbs)|
|Whole wheat tortillas||4 Large|
|Smoked turkey breast slices/16 slices, 1-ounce each||16 Ounce|
|Chopped tomatoes||1 Cup (16 tbs)|
|Sliced green onions||1⁄4 Cup (4 tbs)|
In a small bowl, stir together the yogurt cheese and ricotta.
Spread one-fourth of the cheese mixture on each of the tortillas.
On each tortilla, layer 2 lettuce leaves, 4 turkey slices, 1/4 cup of the tomatoes and 1 tablespoon of the green onions.
Roll up each of the tortillas, jelly-roll fashion.
Insert 6 toothpicks, about 1" apart, into each tortilla roll.
Cut between the toothpicks and serve.
