How long do they take in the oil? How long will they stay fresh. Can I make them in the afternoon and serve them in the evening?

If you are using a pot as big as hers, you should be able to fry 2 to 3 empanadas in one batch. That should not take more than 4 to 6 minutes. Depending on the temperature of your oil. Try to keep the oil at 360°F ... As these are filled with chocolate, these will keep better than the meat ones. You can easily store these for up to a week in the fridge, kept in an airtight container ... You can definitely serve these in the evening if made during the day. Make sure you heat it in the oven or broiler, as microwaving will make the pastry soft.
