Chicken Cheese Quesadillas
|Chicken breast||1 , boned, skinned|
|Low fat cheddar cheese||1 Cup (16 tbs)|
|Green onion||2 Tablespoon, chopped|
|Prepared mild tomato salsa||1⁄2 Cup (8 tbs)|
|Nonfat cooking spray||1|
1 Lightly coat the grill with cooking spray and preheat for 5 minutes.
2 Place the chicken breast on the grill for 5-7 minutes or until done.
3 Let cool and chop into small pieces.
4 Place one-fourth of the chicken, cheese, onion and salsa, on one half of 1 tortilla.
5 Fold the top half over the cheese and chicken and grill for 2-3 minutes, or until the quesadilla is lightly browned and the cheese is melted.
6 Remove from the grill, and repeat the procedure with the remaining tortillas.
7 Serve immediately.
