Ingredients
For the marinade
  Canola oil 1⁄4 Cup (4 tbs)
  Garlic cloves 2
  Lime juice 3 Tablespoon
  Red wine vinegar 3 Tablespoon
  Honey 2 Tablespoon
  Cilantro 1 Teaspoon
  Salt To Taste
  Pepper To Taste
  Cumin 1 1⁄2 Teaspoon
  Chili powder 1 1⁄2 Teaspoon
  Chipotle pepper in adobo To Taste
Other ingredients
  Tortilla 2
  Mexican cheese blend 2 Tablespoon, shredded
  Gruyere cheese 2 Tablespoon, shredded
  Onion 1⁄2 , chopped
  Oil 1 Tablespoon
  Salt 1 Pinch
  Chipotle pepper 1 Teaspoon
  Chicken breast 2
Directions

GETTING READY
1. In a food processor, place the the ingredients of the marinade and blend to a paste. Marinade the chicken with half of the prepared mixture.
2. Preheat the oven to 375F.

MAKING
2. In a skillet, heat oil, saute the onion until the onion turns brown. Add salt and chipotle pepper.
3. Grill the marinated chicken and cut into slices.
4. On the tortilla, spread mexican cheese, place some of the cooked onions, chicken slices. Drizzle about 2 table spoons of the marinade sauce and sprinkle gruyere cheese. Cap with another tortilla shell.
5. Bake at 375F for 5 to 7 minutes.

SERVING
6. Serve with salsa.
