Spanish Salsa

Ingredients
  Cucumber 1 Large, diced
  Ripe tomatoes 5 Small, diced
  Carrot 1 , diced
  Red bell pepper 1 , diced
  Green bell pepper 1 , diced (Add A Yellow Or Orange Bell Pepper Too, If Desired)
  Scallions/1 small onion, chopped 5 , thinly sliced
  Garlic 5 Clove (25 gm), chopped finely
  Ground cumin/Cumin seeds 1⁄4 Teaspoon
  Salt To Taste
  Lemon 1 , freshly squeezed
  Sherry vinegar/White wine vinegar 1 Teaspoon
  Extra virgin olive oil 3 Tablespoon
  Olive oil To Taste
  Fresh herbs 2 Tablespoon, chopped (Parsley, Cilantro, Marjoram And/Or Oregano)
Directions

MAKING
1. In a medium-size ceramic or glass bowl, combine all the ingredients.
2. Mix thoroughly.
3. Taste and adjust seasoning and sourness if required.
4. Cover the bowl with plastic wrap and refrigerate the salsa until ready to serve. This will help to blend all the flavors.

SERVING
5. Serve the salsa with tortilla chips, crackers or bread as an appetizer or serve it as an accompaniment or topping for main dishes.
