Sauted Red Snapper With Mango Salsa

Ingredients
  Firm ripe mango 1 Medium, peeled, pitted, and finely chopped to make 2 cups
  Red onion 1⁄2 Small, chopped fine, soaked in cold water for 20 minutes, and drained
  Jalapeno/1 teaspoon hot sauce 1 , minced
  Lime juice 3 Tablespoon
  Coriander/Basil 2 Tablespoon, chopped
  Vegetable oil 4 Teaspoon
  Red snapper fillets 24 Ounce, skinned
  Lemon juice 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

MAKING
1) In a bowl mix all the salsa ingredients.
2) Chill the mixture for 30 minutes till 1 hour.
3) In a large nonstick skillet, heat the oil over moderate high heat till hot.
4) Add fish and sauté for 3 to 4 minutes till cooked through.
5) Sprinkle lemon juice on top.
6) Add salt and pepper to taste.

SERVING
7) Top each portion with some of the salsa.
