  Seedless cucumber 1 Cup (16 tbs), peeled, diced into 1/4 inch cubes (Hothouse Variety)
  Ripe plum tomatoes 4 , seeded and cut into 1/4 inch dice

  Red onion 1⁄3 Cup (5.33 tbs), finely chopped

  Seeded minced jalapeno pepper 1 Teaspoon

  Fresh lime juice 2 Tablespoon
  Flat-leaf parsley 2 Tablespoon, coarsely chopped

Directions

MAKING
1. In a bowl, put together all the ingredients and mix well.
2. Let it rest for at least 1 hour.

SERVING
3. Serving as relish.
