Lima Beans With Tomatoes

Ingredients
  Finely chopped shallots/Onion 2 Tablespoon
  Vegetable oil 1 Teaspoon
  Frozen green lima beans 1 Cup (16 tbs)
  Canned italian tomatoes 1⁄2 Cup (8 tbs), reserve liquid, seeded and chopped
  Chopped fresh thyme/1/8 teaspoon thyme leaves 1 Teaspoon
  Cornstarch 1⁄2 Teaspoon
  Pepper 1 Dash
Directions

MAKING
1. In a 1-quart microwavable casserole, mix shallots with oil and cook covered on High for 1 minute until shallots are translucent.
2. Stir in lima beans, tomatoes, and thyme; cook covered on High for 5 minutes until the mixture is heated thoroughly; stir once in between the cooking.

FINALISING
3. In a small mixing bowl, blend together the reserved tomato liquid, 2 tablespoons water, cornstarch and pepper.
4. Stir the liquids into the lima bean mixture and cook covered on High for 1 minute until the mixture thickens.

SERVING
5. Serve immediately.
