Lima Beans With Tomatoes
|Finely chopped shallots/Onion||2 Tablespoon|
|Vegetable oil||1 Teaspoon|
|Frozen green lima beans||1 Cup (16 tbs)|
|Canned italian tomatoes||1⁄2 Cup (8 tbs), reserve liquid, seeded and chopped|
|Chopped fresh thyme/1/8 teaspoon thyme leaves||1 Teaspoon|
1. In a 1-quart microwavable casserole, mix shallots with oil and cook covered on High for 1 minute until shallots are translucent.
2. Stir in lima beans, tomatoes, and thyme; cook covered on High for 5 minutes until the mixture is heated thoroughly; stir once in between the cooking.
3. In a small mixing bowl, blend together the reserved tomato liquid, 2 tablespoons water, cornstarch and pepper.
4. Stir the liquids into the lima bean mixture and cook covered on High for 1 minute until the mixture thickens.
5. Serve immediately.
