Chicken In Salsa Verde

Ingredients
  Canola oil 2 Teaspoon
  Chicken pieces 1 Pound, skinned, boned
  Onion 1⁄2 , chopped
  Garlic 1 Clove (5 gm), minced
  Fresh tomatillos/1 can of 12 ounce tomatillos 1 Pound
  Whole green chilies 3 , roasted, chopped
  Apple juice 1⁄2 Cup (8 tbs)
  Chopped fresh cilantro 1 Tablespoon (Or Chinese Parsley)
Directions

MAKING
1) Use a non-stick skillet to spray with vegetable cooking spray.
2) Add oil to heat up.
3) Add chicken pieces to sauté.
4) Add onion and garlic, stirring until limp.
5) Place in remaining ingredients.
6) Reduce heat, cover and simmer about 15 minutes.

SERVING
7) Serve over rice with salad on side.
