Mexican Red Beans
|Red beans||1 Pint|
|Garlic||1 1⁄2 Clove (7.5 gm)|
|Onions||2 Medium, chopped|
|Black pepper||1⁄2 Teaspoon|
|Bacon fat||1 Tablespoon|
Wash and soak beans for several hours, then boil gently for 2 hours.
Drain and rinse.
Put fat in skillet; add chopped onion, garlic, peppers, salt and pepper; let cook 5 minutes; then add to beans in pot with enough water to cover.
Let boil slowly until thoroughly soft, but not mushy.
Add hot water if necessary during the cooking.
Warm up or finish cooking on the grill.
