Chicken Flautas

This is a very basic chicken flautas recipe that packs plenty of flavor but still allows room for more heat if desired. Increase the spices, use spicy salsa or add in additional peppers if you're feeling sassy!
  Canola oil 2 Cup (32 tbs) (For deep frying)
  Chicken breast boneless skinless 3 , fully cooked, shredded
  Salt and pepper To Taste
  White onion 1⁄2 Medium, diced
  Jalapeno 1 Medium, diced
  Garlic 2 Clove (10 gm), minced
  Chili powder 1 Teaspoon
  Cayenne pepper 1⁄2 Teaspoon
  Cumin 1 Teaspoon
  Cilantro 2 Teaspoon
  Chunky salsa 1 Cup (16 tbs)
  Mexican blend shredded cheese 1 Cup (16 tbs)
  Butter 1 Tablespoon
  Flour tortillas 12 Medium
For toppings
  Lettuce 1⁄2 Cup (8 tbs), chopped (Optional)
  Avocado 1 Medium, diced (Optional)
  Sour cream 1⁄2 Cup (8 tbs) (Optional)
  Black olives 1⁄4 Cup (4 tbs), chopped (Optional)
  Salsa verde 1⁄2 Cup (8 tbs) (Optional)
  Cheese 1⁄2 Cup (8 tbs) (Optional)
  Tomatoes 1 Medium, chopped (Optional)

1. Sprinkle the chicken breast with salt and pepper to taste.
2. In a pot, pour chicken stock. Put the seasoned chicken breasts.
3. On medium heat bring it to boil and cook the chicken till fully done.
4. Transfer onto a plate and let it cool till it can be handled.
5. Using fork or clean hands shred the chicken and set aside.

6. In a pan, melt butter on medium heat.
7. Put onions and jalapenos and sauté till onions are tender and translucent.
8. Add the garlic and continue to sauté till fragrant.
9. Season with chilli powder, cayenne and cumin. Stir to mix well.
10. Add cilantro and chunky salsa. Mix well till combined.
11. Put the shredded chicken and mix well till coated.
12. Add the cheese and stir on medium heat till it melts.
13. TACO: Take a tortilla, put 1 spoon of the filling about 2 inches from the edge.
14. Roll the tortilla tightly and seal the edge with a toothpick.
15. Repeat this with all the tortillas.
16. In a deep frying pan or deep fryer, heat oil to very hot or around 350 degrees F.
17. Put the stuffed tortillas into the oil and fry till golden brown.
18. Transfer onto a paper towel to drain off excess oil.

19. In a serving plate, slice a fried taco and top with choice of topping and serve.
