Hot Chili Con Queso
|Vegetable oil||1 Tablespoon|
|Onion||1 Large, chopped|
|Garlic||1 Clove (5 gm), minced|
|Chili powder||1 Tablespoon|
|Tomatoes||1 Can (10 oz), drained|
|Diced green chilies||1 Can (10 oz), drained|
|Jalapeno peppers||2 , chopped|
|Mild cheddar cheese||1 Pound, shredded|
In skillet saute garlic and onion in oil for about 5 minutes.
Stir in flour and chili powder.
Cook for 1 minute, stirring constantly.
Add tomatoes, chilies and peppers and continue cooking until thickened, about 5 minutes.
Over low heat, gradually add the cheese and stir until cheese is completely melted.
