Mexican Hot Chocolate
|Mexican chocolate/3 1/2 ounces semi-sweet chocolate plus 1 teaspoon cinnamon||4 Ounce|
|Whole milk||4 Cup (64 tbs), scalded|
Break the chocolate into pieces.
Place in food processor using the metal blade.
Pulse several times to break up the pieces, then run machine continuously until finely chopped.
Add the sugar through the feed tube with the motor running.
With the motor still running, pour 1 cup of the scalded milk through feed tube.
Add the vanilla, salt, and eggs in the same manner.
Process until you have a good froth.
Transfer to the remaining scalded milk in the saucepan, stirring constantly over low heat.
