Mexican Rice

Ingredients
  Chopped onion 2⁄3 Cup (10.67 tbs)
  Bacon fat 3 Tablespoon
  Converted white rice 1 1⁄2 Cup (24 tbs) (Raw Ones)
  Chopped green pepper 1 Cup (16 tbs)
  Chili powder 1 Teaspoon
  Tomato juice 1 Cup (16 tbs)
  Catsup 1⁄2 Cup (8 tbs)
  Salt 2 Teaspoon
  Water 3 Cup (48 tbs)
Directions

MAKING
1. Take a 5 quart heavy Dutch oven that has a tight fit cover, add bacon fat, heat in and sauté in onions. Add rice along with chili powder, 1 cup chopped green pepper, catsup, salt and tomato juice. Add water, bring mixture to a boil, lower the heat, cover and allow to simmer for 20 minutes or till liquid is completely absorbed and rice is well cooked.

SERVING
2. Top with chopped tomato and green pepper and serve hot.
