Chile Verde

Ingredients
  Anaheim chile 1 Pound
  Lean pork 1⁄2 Pound, cubed
  Vegetable oil 2 Tablespoon
  Jalapeno chiles 2 , minced
  Onions 2 , chopped
  Tomatoes 3 , chopped
  Chopped cilantro 1⁄4 Cup (4 tbs)
  Garlic 2 Clove (10 gm), minced
  Tomatoes 2 , pureed
  Water 1 Cup (16 tbs)
  Salt 2 Teaspoon
  Freshly ground black pepper 1⁄2 Teaspoon
  Oregano 1 Teaspoon
Directions

Roast, peel and chop the Anaheim chiles.
Heat oil in large skillet and saute the pork until brown.
Add the Anaheims, jalapenos, onions, chopped tomatoes, cilantro and garlic.
Simmer 15 minutes.
Add the pureed tomatoes, water and seasonings.
Simmer for about 1 hour, stirring occasionally.
