|Boneless center cut pork||2 Pound|
|Onion||1 Medium, chopped|
|Whole chilies||8 Ounce (2 Cans, 4 Ounce Each)|
|Canned chicken broth||10 Ounce (1 Can)|
|Canned tomatoes||28 Ounce, crushed (1 Can)|
|Garlic||5 Clove (25 gm), crushed|
Chop pork into small pieces.
Brown in a small amount of oil in saucepan.
Saute until pork is tender.
Seed chilies and cut into long strips.
Add to saucepan.
Stir in chicken broth, tomatoes, garlic, salt and pepper.
Simmer, covered, for 2 to 3 hours or until of desired consistency.
Serve with refried beans, Mexican rice and flour tortillas.
