Mexican Pork

Ingredients
  Boneless center cut pork 2 Pound
  Oil 1 Tablespoon
  Onion 1 Medium, chopped
  Whole chilies 8 Ounce (2 Cans, 4 Ounce Each)
  Canned chicken broth 10 Ounce (1 Can)
  Canned tomatoes 28 Ounce, crushed (1 Can)
  Garlic 5 Clove (25 gm), crushed
  Salt To Taste
  Pepper To Taste
Directions

Chop pork into small pieces.
Brown in a small amount of oil in saucepan.
Add onion.
Saute until pork is tender.
Seed chilies and cut into long strips.
Add to saucepan.
Stir in chicken broth, tomatoes, garlic, salt and pepper.
Simmer, covered, for 2 to 3 hours or until of desired consistency.
Serve with refried beans, Mexican rice and flour tortillas.
