Fresh Tomato Salsa

  Olive oil 3 Tablespoon
  Red onion 1⁄2 Cup (8 tbs), minced
  Green chili 1 Small, minced
  Red pepper 1 Small, minced
  Green pepper 1 Small, minced
  Cilantro 3 Tablespoon, minced
  Garlic 1 Clove (5 gm), minced
  Sea salt/Seasoned salt/ salt free seasoning 1⁄2 Teaspoon

GETTING READY 1) Mince onion, green chili, green pepper, red pepper, cilantro and garlic. 2) Boil water and plunge the tomatoes for few seconds. 3) Take out the tomatoes from the water and remove the skins. 4) Chop the tomatoes into small cubes and keep aside. MAKING 5) In a small skillet, heat the oil. 6) Add minced peppers and minced chili to the hot oil. 7) Saute them properly while stirring. 8) As chili and peppers turn into bright color, add cilantro and garlic. 9) In a small mixing bowl, take out the vegetables to cool and then mix with chopped tomatoes. 10) Season the mixture with sea salt and keep aside. FINALIZING 11) Combine half of the vegggie mixture with lettuce. 12) Toss well. 13) Mix the remaining salsa with the remaining veggies. 14) If using tortilla chips in place of cheese then place 1 cup chips to each of the two plates. 15) Pour gucamole over the chips. 16) Place the salsa-lettuce and vegetable mixture over the layer of gucamole. 17) Cover the gucamole with the remaining salsa veggies. 17) Top the vegetable layer again with gucamole and sour cream (if required). 18) Add the remaining salsa over the gucamole. SERVING 19) Serve the tostadas with a garnish of black olives and remaining tortilla chips. 20) If cheese is being used then garnish the tostada with grated cheese.
