Creamy Corn Pepper And Yam Chowder With Salsa

Ingredients
  Maple bacon 1⁄2 Cup (8 tbs), sliced
  Red onion 1 Cup (16 tbs), sliced
  Butter 3 Tablespoon
  Flour 2 Tablespoon
  Sweet bell peppers 2 Cup (32 tbs), diced / seeded (Yellow Maestro's)
  Chicken stock 2 Cup (32 tbs)
  35% cream 2 Cup (32 tbs)
  Roasted chicken 2 Cup (32 tbs), torn into pieces
  Corn 2 Cup (32 tbs)
  Yams 2 Cup (32 tbs), diced
Directions

In a medium pot cook together red onions, maple bacon and butter over medium heat.
After 7-10 minutes, once onions and bacon are caramelized (deep golden brown), add flour and cook for additional 3 minutes.
Add yellow Maestro™ peppers, frozen or fresh corn and yams.
Add chicken stock and cream. Cook until vegetables are tender and soup is thick and velvety.
Add chicken.
