Green Chili Queso

Ingredients
  Anaheim pepper 3 Large, chargrilled
  Velveeta cheese 26 Ounce, cubed
  Chicken stock 1⁄4 Cup (4 tbs)
  Onion powder 1⁄4 Teaspoon
  Garlic powder 1⁄4 Teaspoon
  Dried ground jalapenos/Cayenne 1⁄8 Teaspoon
Directions

MAKING:
1)On a grill or stove char grill the peppers till they are well charred. Peel the skin off the chilies and chop them up and set aside.
2)In a heavy cast iron griddle or a heavy bottom pan or in a slow cooker add the cheese cubes and the chilies and heat them on a low heat.
3)To the pot now add the onion powder, jalapeno powder and garlic powder and let the cheese melt.
4)Add the chicken stalk and mix well and let it simmer for a while till it thickens and becomes nice and smooth.

SERVING:
5)Let the dip cool a bit and serve with your choice of crackers or chips and enjoy!

TIP:
This is a versatile recipe so you can add more chilies if you like a more spicy queso dip.
