Mexican Breakfast Burrito
|Refried beans||400 Gram (1 Tin)|
|Flour tortillas||4 Large|
|Reduced fat cheddar cheese||150 Gram, grated|
|Low fat fromage frais||100 Gram|
|Semi skimmed milk||2 Tablespoon|
|Red chili||1 Small, finely chopped|
|Freshly ground black pepper||To Taste|
|Vegetable oil||1 Tablespoon (Rapeseed Oil)|
Preheat the oven to 200°C/400°F/gas mark 6.
Drain the beans and mash them.
Put each tortilla on a large sheet of foil, spread with the mashed beans and add the cheese.
Fold the foil over the top and seal, keeping it flat, then put in the oven and cook for 8-10 minutes.
Remove from the oven and set aside.
Mix the fromage frais, milk and chilli in a bowl and season with black pepper.
Open the foil parcels and spoon the fromage frais mixture on top of the burritos, dividing it equally between them.
This can also be served with salsa or tofu guacamole.
