Mexican Wedding Cakes
|Butter||1⁄2 Cup (8 tbs)|
|Confectioners sugar||1⁄4 Cup (4 tbs)|
|Vanilla extract||1 Teaspoon|
|Finely ground pecans||3⁄4 Cup (12 tbs)|
|Unbleached white flour||1 Cup (16 tbs)|
|Sifted confectioners sugar||1 Tablespoon|
Preheat oven to 400° F.
Beat butter, sugar and vanilla extract together. Stir in pecans and flour. Mix thoroughly.
Form into 1-inch balls. Place 1 inch apart on greased cookie sheets.
Bake for 10 to 12 minutes.
Remove from oven. Roll cookies in confectioners' sugar until well coated. Set aside to cool. Cookies may be rolled in confectioners' sugar again after they have cooled, if desired.
