Red Bean Chili Con Carne

Ingredients
  Red beans 14 Ounce
  Warm water 2 Pint
  Salt pork strip 2
  Salt 1 Teaspoon
  Olive oil 1⁄8 Pint
  Onions 4
  Garlic 2 Clove (10 gm)
  Minced beef 2 Pound
  Chili powder 3 Tablespoon
  Oregano 1 Teaspoon
  Tomatoes 16 Ounce
  Golden syrup 1 Tablespoon
  Lemon juice 1 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Soak 14 oz. red beans overnight covered in water.
Drain.
Add 2 1/2 pints warm water, 2 strips salt pork and 1 teaspoon salt.
Cook slowly for at least 2 hours until done.
Heat 1/8 pint olive oil.
Add 4 chopped onions, 2 cloves crushed garlic.
Cook until transparent.
Stir in 2 lb. minced beef.
Cook until meat is browned.
Add 1 1/2 tablespoons flour and 3 tablespoons chilli powder, 1 teaspoon oregano.
Mix well.
Stir in 16 oz. tinned tomatoes, 1 tablespoon golden syrup and 1 tablespoon lemon juice.
Simmer over moderate heat for 1/2 hour, stirring occasionally.
Combine the meat and the beans, salt and pepper to taste.
Add more chilli powder if you prefer a hotter chilli.
Put aside to cool.
Reheat next day over low heat.
Serve in the centre of a corn meal souffle' ring.
