Fiesta Chicken Nachos
|Olive oil||1 Tablespoon|
|Boneless skinless chicken breasts||1 Pound|
|Cheddar cheese||16 Ounce|
|Tortilla chips||9 Ounce (1 Bag)|
|Bell peppers||2 , diced (Green Or Red)|
|Onion||1 Small, chopped|
|Tomato||1 Large, diced|
In 12-inch skillet, heat oil over medium-high heat and cook chicken, stirring occasionally, 8 minutes or until no longer pink.
Remove from skillet; cut into strips.
In same skillet, combine chicken and Cheese Creations Sauce; heat through.
On serving platter, arrange layer of tortilla chips, then 1/2 of the sauce mixture, bell peppers, onion and tomato; repeat, ending with tomato. Garnish, if desired, with chopped fresh cilantro and shredded lettuce.
