1 Wrap the tortillas in foil and heat in an oven for about 15 minutes to soften; or place each one briefly on a hot griddle.
2 Using 2 spoons, place a narrow pile of filling along the center of each tortilla, working on only one at a time. Roll and secure with a toothpick.
3 While rolling the flautas, heat about 1/4 inch of lard to medium heat in a large heavy skillet. Fry the flautas, turning to brown evenly. Drain on paper towels.
