Any Grain Strata

Ingredients
  Textured vegetable protein 1⁄2 Cup (8 tbs)
  Boiling water 1⁄2 Cup (8 tbs)
  Cooked grain 2 Cup (32 tbs)
  Salt 1⁄4 Teaspoon
  Ground nutmeg 1⁄2 Teaspoon
  Olive oil 2 Tablespoon
  Shredded cheddar cheese/Jack cheese 1⁄2 Cup (8 tbs)
  Fresh spinach/10-ounce package frozen spinach, thawed and drained 1 Pound
  Garlic powder 1⁄4 Teaspoon
  Black pepper 1 Dash
  Marinara sauce 1 Cup (16 tbs)
  Grated parmesan cheese 1⁄4 Cup (4 tbs)
Directions

Soak TVP in 1/2 cup boiling water until softened. Combine with grain, salt, nutmeg, olive oil and cheese. Turn into an oiled 8-inch square pan.
If using fresh spinach, steam until just limp and drain well. Spread steamed or thawed spinach over grain mixture.
Stir garlic powder and black pepper into marinara sauce. Pour over spinach. Sprinkle with Parmesan cheese.
Bake uncovered at 400° F. for 45 minutes.
