Bean Burritos Deluxe
|Onion||1 Small, chopped|
|Scallions||2 , thinly sliced|
|Jalapeno pepper||1 , minced|
|Canola oil||1⁄2 Teaspoon|
|Cooked pinto beans||2 Cup (32 tbs), mashed|
|Chili powder||1 Tablespoon|
|Ground cumin||1⁄2 Teaspoon|
|Dried oregano||1⁄4 Teaspoon|
|Ground black pepper||1 Pinch|
|Shredded reduced fat cheddar cheese||3⁄4 Cup (12 tbs)|
|Shredded lettuce||1 Cup (16 tbs)|
|Peeled seeded chopped tomatoes||1⁄2 Cup (8 tbs)|
|Minced fresh coriander||1 Tablespoon|
|Super salsa||1 Cup (16 tbs)|
In a medium bowl, combine the onions, scallions, jalapenos, and oil.
Microwave on high for 4 minutes, or until tender.
Add the beans, chili powder, cumin, oregano, and black pepper.
Place the tortillas between two paper towels.
Microwave on high for 20 seconds to soften.
Spoon 1/3 cup of the bean filling down the center of each tortilla.
Fold in the sides and roll up the tortillas.
Place, seam-side down, in a 7" X 11" baking dish.
Cover with a paper towel.
Microwave on high for 5 minutes, or until hot throughout.
Sprinkle with the Cheddar.
Microwave on medium (50% power) for 2 minutes, or until the cheese is melted.
Sprinkle with the lettuce, tomatoes, and coriander.
Serve with the salsa.
