Bean Burritos Deluxe

Ingredients
  Onion 1 Small, chopped
  Scallions 2 , thinly sliced
  Jalapeno pepper 1 , minced
  Canola oil 1⁄2 Teaspoon
  Cooked pinto beans 2 Cup (32 tbs), mashed
  Chili powder 1 Tablespoon
  Ground cumin 1⁄2 Teaspoon
  Dried oregano 1⁄4 Teaspoon
  Ground black pepper 1 Pinch
  Flour tortillas 6
  Shredded reduced fat cheddar cheese 3⁄4 Cup (12 tbs)
  Shredded lettuce 1 Cup (16 tbs)
  Peeled seeded chopped tomatoes 1⁄2 Cup (8 tbs)
  Minced fresh coriander 1 Tablespoon
  Super salsa 1 Cup (16 tbs)
Directions

In a medium bowl, combine the onions, scallions, jalapenos, and oil.
Microwave on high for 4 minutes, or until tender.
Add the beans, chili powder, cumin, oregano, and black pepper.
Place the tortillas between two paper towels.
Microwave on high for 20 seconds to soften.
Spoon 1/3 cup of the bean filling down the center of each tortilla.
Fold in the sides and roll up the tortillas.
Place, seam-side down, in a 7" X 11" baking dish.
Cover with a paper towel.
Microwave on high for 5 minutes, or until hot throughout.
Sprinkle with the Cheddar.
Microwave on medium (50% power) for 2 minutes, or until the cheese is melted.
Sprinkle with the lettuce, tomatoes, and coriander.
Serve with the salsa.
