Salsa Ranchera

Ingredients
  Vegetable oil 2 Teaspoon
  Green capsicum 1 , chopped (Pepper)
  Onion 1 , chopped
  Fresh green chilies 2 Medium, seeded and chopped
  Garlic 2 Clove (10 gm), chopped
  Roasted tomatoes 5 , peeled, seeded and chopped (Ripe Ones)
  Chopped fresh oregano 1 Tablespoon
  Ground cumin 1 Teaspoon
  Chopped fresh coriander 1 Tablespoon
Directions

Heat oil in a frying pan over a medium heat, add green capsicum, onion, chillies and garlic and cook, stirring, for 4 minutes or until vegetables are soft.
Add tomatoes, oregano and cumin and simmer for 10 minutes or until sauce reduces and thickens.
Stir in coriander (cilanto).
