Turkey Taco Salad
|Fully cooked turkey breast portion||6 Ounce, chopped to make 1 1/2 cups|
|Salsa||1 Cup (16 tbs)|
|Torn lettuce||4 Cup (64 tbs)|
|Shredded monterey jack cheese||3 Ounce (3/4 Cup, Half Of A 6 Ounce Package)|
|Cherry tomatoes||4 , quartered|
|Fully cooked turkey breast portion||5|
In a medium saucepan stir together turkey and salsa.
Cook about 8 minutes or till heated through, stirring occasionally.
Meanwhile, in a large salad bowl combine lettuce, shredded cheese, and tomatoes.
Add turkey mixture to salad bowl and toss lightly.
Arrange Tortilla Chips around the side of the salad bowl.
Tortilla Chips: Stack four 8-inch flour tortillas.
Cut the stack into quarters.
Place tortilla wedges in a single layer on a large, ungreased baking sheet.
Bake in a 350° oven for 12 to 15 minutes or till dry and crisp.
