Mexican Pie

Ingredients
  Microwaved 9 inch one crust cornmeal pastry shell 1
  Frozen mexican beef mix 1 Can (10 oz), Defrosted (1 Container)
  Canned refried beans 16 Ounce (1 Can)
  Shredded cheddar cheese 1 Cup (16 tbs), divided
  Shredded monterey jack cheese 1 Cup (16 tbs), divided
Toppings:
  Shredded lettuce 1 Cup (16 tbs)
  Chopped tomato 1⁄2 Cup (8 tbs)
  Sliced black olives 1⁄4 Cup (4 tbs)
  Chopped onion 1⁄4 Cup (4 tbs)
  Dairy sour cream/Salsa sauce 1⁄4 Cup (4 tbs)
Directions

Prepare pastry shell.
Set aside.
Spread beans in prepared crust.
Sprinkle 1/2 cup of each cheese over beans.
Spread beef mix evenly over cheese.
Top with remaining cheese.
Microwave at 50% (Medium) 6 to 10 minutes, or until heated and cheese melts, rotating dish 1 or 2 times.
Sprinkle with one or all of the toppings.
