Chimichanga - Oven Baked Mexican Cuisine

Style:Mexican An easy chimichanga recipe. Usually deep fried, chimichangas can also be oven-fried This is an awesome recipe, if you like Mexican food! This recipe is for a veggie chimichanga, but it can be made with meat as well.
For the potato filling
  Cooked potatoes 1⁄4 Cup (4 tbs)
  Green onions 1⁄2 Teaspoon, chopped finely
  Red bell peppers 1⁄4 Teaspoon, chopped finely
  Yellow bell peppers 1⁄4 Teaspoon, chopped finely
  Green bell peppers 1⁄4 Teaspoon, chopped finely
  Onions 1⁄4 Teaspoon, chopped finely
  Tomatoes 1⁄4 Teaspoon, chopped finely
For the black bean filling
  Black beans 1⁄4 Cup (4 tbs)
  Corn 2 Tablespoon
  Green onions 1⁄2 Tablespoon
  Oregano 1 Pinch
  Cumin powder 1⁄4 Teaspoon
  Garlic powder 1⁄2 Teaspoon
  Paprika 1 Teaspoon
  Bell peppers 1 Teaspoon, chopped finely (Red, yellow and green bell peppers used)
  Salt To Taste
For assembling tortilla chips
  Corn tortilla chips 2 Medium
  Salsa 1 Teaspoon
  Guacamole 1 Teaspoon
  Sour cream 1⁄2 Teaspoon
  Shredded cheese 2 Pinch
For assembling the chimichangas
  Tortillas 4 Medium
  Refried beans 2 Tablespoon
  Mexican rice 2 Tablespoon
  Shredded cheese 1 Tablespoon
  Lettuce 1⁄2 Bunch (50 gm)
  Enchilada sauce 2 Tablespoon (Optional)

To prepare the potato filling:
1. In a bowl of cooked potatoes (cooked with salt, pepper and cumin powder), add some finely chopped green onions, red, yellow, green bell peppers, onions and tomatoes. Mix well.
To prepare the black bean filling:
2. Take a bowl, add the black beans, corn, green onion, oregano, cumin powder, garlic powder, paprika, bell peppers, onions, tomatoes and salt to taste. Mix well to combine all the ingredients.
For the assembling of the chimichanga:
3. Take each tortilla, spread refried beans, Mexican rice and then top it with any of the filling prepared earlier; either the potato filling or the black beans filling.
4. Sprinkle some cheese and chopped bell peppers and onions and fold the tortillas and seal it with tooth picks.
5. The chimichangas can be either baked or fried.
6. To bake the chimichangas, spray them with butter spray and line them on a baking sheet and bake in a preheated oven at 350 F. Flip sides after 8 to 10 minutes when one side is golden brown.

7. The baked chimichangas can be arranged over a layer of lettuce leaves, topped with shredded cheese and olives. Some enchilada sauce can be poured over the top if desired.

8. Serve the chimichangas with sour cream, guacamole and salsa.

you can also use the prepared fillings on tortilla chips and serve them with salsa and guacamole.
