Mexican Fried Rice

Ingredients
  Long grain rice 1 Cup (16 tbs)
  Hot water 1 1⁄2 Cup (24 tbs)
  Bacon slices 6 , chopped
  Condensed consomme 1 Can (10 oz)
  Seasoned tomato sauce 8 Ounce (1 Can, 1 Cup)
  Chopped green pepper 1⁄4 Cup (4 tbs)
  Chopped onion 1⁄4 Cup (4 tbs)
  Garlic 1 Clove (5 gm), minced
  Cumin seed 1⁄2 Teaspoon
Directions

Soak rice in hot water 25 minutes; drain; let stand to dry, about 1 hour.
Cook bacon till crisp; remove bacon.
Add rice to drippings and cook till rice is lightly browned.
Add bacon and remaining ingredients.
Cover, and cook over low heat, stirring occasionally, till rice is done and liquid absorbed, about 30 minutes.
(Add water during cooking if needed.)
