Ingredients
  Zucchini 6 Small
  Tomatoes 2 Large, peeled and finely chopped
  Onion 1 Large, finely chopped
  Minced cilantro 1⁄2 Teaspoon
  Chopped green chiles 1⁄2 Cup (8 tbs)
  Salt To Taste
  Monterey jack cheese 1 Cup (16 tbs), grated
Directions

1 Slice the zucchini. Combine with the tomatoes, onion, cilantro and green chiles. Cook over medium-low heat for 30 to 45 minutes, or until squash is tender. Add salt to taste.
2 Add the cheese and stir into the vegetables.
